one of my fav salads..!!*


Watermelon Salad with Grapefruit-Mint Vinaigrette

Ingredients
1/2 small watermelon, sliced and cut into wedges/chunks
1/2 a red onion, thinly sliced
1 large grapefruit
Juice of 1/2 lime
Salt
Pepper
Small handful of mint leaves
1/2 cup canola or olive oil
Instructions
Place watermelon and red onion on a serving plate.
Peel and segment the grapefruits over a bowl to catch the juice. Place the grapefruit wedges on the serving platter and squeeze the remaining grapefruit into the bowl, discarding the pulp.
Place 1/4 of the grapefruit juice into the blender with juice from 1/2 a lime, salt, pepper, and mint leaves.
Blend on high while slowly streaming in the olive oil.
Serve the dressing on the side or drizzled over the salad.

Peanut Butter, Banana and Chia Seed Bagelwich

A perfect grab-and-go breakfast, this bagelwich only requires four ingredients and comes together in a flash!
Ingredients: serves 11 bagel thin, toasted2 tbsp. peanut butter1 banana, sliced½ tbsp. chia seeds
Directions: Spread each slice of toasted bagel thin with 1 tbsp. peanut butter. Top peanut butter-topped bagel thin with banana slices. Sprinkle with chia seeds.

Healthy Treat:
Black Forest Banana Split Recipe


Ingredients
2 cups nonfat ricotta cheese
2 bananas, split lengthwise
16 walnut halves
1 teaspoon unsweetened cocoa powder
2 teaspoons cherry concentrate (available at health-food stores)
Spoon ricotta into a dessert dish and place a banana half on each side of the cheese. Put the walnut halves on top and dust with the cocoa powder. Drizzle the cherry concentrate on top.

Makes: 2 servings

Nutrition facts per serving: 377 calories, 23g protein, 40g carbohydrate, 11g fat (1.5g saturated), 3.5g fiber.
